Noodle

Udon - is a type of thick wheat-flour noodle.

Soba - is a type of thin buckwheat-flour noodle. Soba noodles are served either chilled with a dipping sauce, or in hot broth as a noodle soup.

Somen, 'Hiyamugi' (slightly thicker than somen) - is a type of very thin (less than 1.3mm) wheat-flour noodle, usually served cold. Somen chilled with ice is a popular meal to help stay cool in summer. Also Somen served in hot soup is usually called “Nyumen”.

Ramen - is egg noodle in soup. Yumi will show you how to cook ramen using stock powder with a lot of vegetables, sliced pork and seafood in a thick soup.
